Ingredients

  • 1 pint heavy whipping cream (475 ml)
  • 1 bag frozen strawberries
  • 1 can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 boxes Butter Keks chocolate biscuits

I used my Ninja Foodi blender for this recipe and it worked perfectly for blending the frozen strawberries into a smooth creamy mixture.

How to Make Strawberry Ice Cream Sandwiches

Blend the Ice Cream

Add the heavy whipping cream, frozen strawberries, sweetened condensed milk, and vanilla extract into your blender.

Blend until smooth and creamy.

Optional: Add a little pink food coloring if you want a brighter strawberry pink color.

Prepare Your Pan

Line a loaf pan or baking dish with parchment paper. This helps remove the ice cream sandwiches easily after freezing.

Add the Cookie Layer

Place one layer of cookies on the bottom of the pan, leaving a little space between each cookie.

I used Butter Keks chocolate biscuits because I loved the thin chocolate layer inside the cookies. It gives the sandwiches a delicious ice cream cone flavor.

Pour & Freeze

Pour the strawberry ice cream mixture over the cookies and smooth it out evenly.

Add another layer of cookies on top.

Freeze overnight for the best results.
