How to Make the Cake

Step 1: Bake the Chocolate Cake

Start by preparing your chocolate cake batter according to the package instructions. I added Dutch cocoa powder and a little espresso coffee to give the cake a deeper chocolate flavor and rich dark color.

Bake the cake in a rectangular pan and let it cool completely before assembling.


Step 2: Make the Creamy Filling

In a stand mixer, whisk together:

  • Heavy whipping cream
  • Condensed milk
  • Vanilla bean

Whisk until fluffy and creamy.

Using condensed milk instead of regular sugar helps keep the ice cream soft and creamy instead of icy and hard.


Step 3: Make the Crunchy Fudge Layer

Crush your chocolate cookies into chunks.

Mix them with chocolate syrup and melted milk chocolate to create that signature crunchy chocolate layer just like Dairy Queen ice cream cakes.

This step gives the cake that fudgy chocolate crunch in every bite.


Assemble the Ice Cream Cake

  1. Add your first chocolate cake layer
  2. Spread some cream filling
  3. Add the crunchy cookie chocolate layer
  4. Add another cake layer
  5. Cover everything with the remaining cream
  6. Smooth it out (or keep it rustic like I did!)

Add sprinkles halfway through freezing.

Freeze overnight for best results.
